Baked western omelet

This is good topped with salsa and sour cream.


What you’ll need:

4 large eggs
¼ c water
4 oz cooked ham, sliced into thin strips
1 c sliced mushrooms
½ c chopped tomato
½ c chopped scallions
¼ c chopped bell pepper
1/8 tsp pepper

Preheat oven to 375 degrees. Lightly spray a 10 inch glass pie pan with non stick cooking spray. In a medium bowl, beat eggs and water with a wire whisk until well blended. Stir in remaining ingredients and pour into prepared pan, making sure to scrap the sides down. Bake 20 - 30 minutes or until eggs are set and slightly puffed and browned. Serves 4.

cooked ham - $2.12/lb
mushrooms - $3.00
tomato - $1.00
scallions - $2.50
bell pepper - $0.90
