Bumkin’s cornbread salad

What you’ll need:

1 pan cornbread, cooled
8 slices bacon, cooked and crumbled
1 medium onion-chopped 2 large tomatoes chopped (I used Roma tomatoes)
2 hardboiled eggs, chopped (optional but I used them)
1 green pepper, chopped
1 jalapeno pepper, chopped
1 cup mayonnaise

Crumble up the cornbread and stir in bacon, pepper and onion. If desired add eggs and jalapeno. Gently stir in tomatoes and mayonnaise. Chill for several hours. It’s better the next day!

Variation: use just enough ranch dressing to moisten instead of mayonnaise.

onion - $1.12
tomato - $1.00/each
eggs - $1.09/ dozen
bell pepper - $0.90
jalapeno - $1.08
mayonnaise - $2.50
Total - $6.49
