Fruit filled shortcake

Strawberries aren’t the only fruit that tastes good with shortcake!

What you’ll need:

2 c biscuit mix
1/3 c quick cooking oats
3 Tbl brown sugar
½ c milk
3 Tbl butter, melted
2 pears, peeled and cut into 1 inch pieces
1 c cranberries (frozen is fine)
½ c orange juice
¼ tsp cinnamon
1 can apricot pie filling

Preheat oven to 425 degrees. In a large bowl, mix first 5 ingredients until a soft dough forms. Drop dough onto an ungreased cookie sheet into six ‘piles’. Sprinkle with additional brown sugar & oats if desired. Bake 8 - 10 minutes or until golden brown. In a heavy saucepan, heat remaining ingredients except pie filling until the fruit mixture boils. Reduce heat and simmer uncovered 3 - 4 minutes, stirring occasionally, just until the cranberries pop. Stir in pie filling. Split warm shortcakes and fill and top with fruit mixture. Top with whipped topping if desired. Makes 6 servings.
