Funnel cakes

Now I have a taste for fair food and I’m going to have to make me a funnel cake! Delicious!

What you’ll need:

3 eggs
2 c milk
¼ c sugar
3 2/3 c flour
½ tsp salt
2 tsp baking powder

Mix salt, baking powder and half the flour. Set aside. In another bowl cream eggs, sugar and milk. Combine the two mixtures, beating until smooth. Add more flour until it’s the right consistency to run through a funnel. Heat oil in an 8 inch skillet. Put your finger over the bottom opening of the funnel and fill it with batter. Hold the funnel close to the surface of the oil and release the batter while making a circular motion. Fry until golden brown on one side. Using tongs carefully turn the cake over. Fry the second side 1 minute. Drain on paper towels. Sprinkle with powdered sugar or top with fruit as desired. Makes about 12 funnel cakes.
