Kristi’s stuffed pepper soup

Ok I threw this together after tasting it at a football game at a local gathering! I can give you the ingredients, amounts are up to you! This makes a huge pot!

What you’ll need:

2 lbs browned ground beef
1 onion, diced finely
2 bell peppers, diced finely
2 large banana peppers, diced
2 tomatoes, chopped
Large can of tomato juice
1 cup carrots, diced
Italian seasoning
2 c rice

Make sure you drain your grease from meat! Mix everything together in a large pot. Add water as necessary. Simmer for a couple of hours. This recipe freezes well. Serve with cornbread.

Variation: Use a can of spicy V-8 juice instead of tomato juice.

I made a huge pot and it tasted just like stuffed bell peppers!!!!!!

ground beef - $2.00/lb
onion - $1.12
bell pepper - $0.90
banana peppers - $0.89/each
tomato - $1.00
tomato juice - $2.28 or
V-8 - $2.89
carrots - $0.89
Italian seasoning - $2.89
rice $2.12
cornbread mix - $0.29
Total - $14.68
