Mediterranean chicken with vegetables

Easy and delicious.

What you’ll need:

For chicken:

1 c bran cereal, crushed
4 boneless skinless chicken breasts
½ tsp salt
¼ tsp pepper
¼ c milk

For vegetables:

4 Tbl olive oil
1 medium zucchini, slice
1 red bell pepper, cut into ½ inch strips
½ red onion, sliced and separated into rings
1 clove of garlic, minced
3 Tbl water
4 tsp lime juice

Season washed chicken breasts with salt and pepper. Put the milk in a shallow dish or pan and the cereal in another shallow dish or pan. Dip the chicken into the milk and then coat with the cereal. Heat 2 Tbl oil in a skillet over medium heat. Cook chicken in the oil for 15 minutes, turning once, or until the juice runs clear when it’s cut at it’s thickest point. Remove chicken from skillet and place on a cookie sheet in a 200 degree oven to keep warm. In the same skillet, heat remaining 2 Tbl oil over medium heat. Cook vegetables and garlic in oil 3 minutes, stirring occasionally. Stir in 3 Tbl water and lime juice and let cook an additional 1 minute. Serves 4.
