Great tasty way to use leftover mashed potatoes!

What you’ll need:

Leftover mashed potatoes
½ c shredded cheddar cheese or any cheese that you like
¼ c diced onions
¼ c diced bell peppers

Mix everything together well. Heat a small amount of oil on a griddle. Place heaping piles of the potato mixture about an inch apart on the hot griddle. Let cook about 2 minutes or until the bottom side is browned and turn over. Press down lightly. Cook for an additional 2 minutes or until the second side is browned.

Cost:
shredded cheese - cheddar - $1.50
onion - $1.12
bell pepper - $0.90
Total - $2.52
