Squash dressing

What you’ll need:

1 pkg cornbread mix
1 small onion, finely chopped
1 ½ c cooked squash
1 bell pepper, finely chopped
2 Tbl butter
1 jar of pimento (optional)
2 Tbl sugar
½ lb Velveeta cheese, cubed
1 tsp salt
1 can cream of mushroom soup

Bake cornbread according to instructions. Mix together cooked cornbread, squash, butter, sugar and salt. Beat eggs and add to mixture. Sauté onion and bell pepper just until tender. Mix into mixture. Add pimento if desired. Stir in cheese and mushroom soup. Bake in a casserole dish @ 375 degrees until brown.

Variation: Use cream of chicken soup and pepper jack or cheddar cheese instead of Velveeta. You can also bake some jalapenos into the cornbread.
