Stuffed tomatoes

What you’ll need:

8 medium tomatoes
2 Tbl olive oil
1 c pepper jack cheese, shredded
2 c shrimp, peeled and chopped
½ c cilantro, chopped
1 tsp seafood seasoning

Cut top ¼ off tomatoes and scoop out the pulp. Brush the outside of each tomato with olive oil. Set aside. Mix together tomato pulp, cheese, shrimp, cilantro and seasoning and toss to coat. Stuff each tomato with ¼ cup of mixture and set on a rack coated with non stick cooking spray. Bake @ 375 degrees for about 5 - 8 minutes or until shrimp is cooked and cheese melts. These are also very good cooked on the barbeque pit. Makes 8 servings.

shredded cheese - mixed Mexican blend - $1.69
1/2 lb 30/40 shrimp - $2.50
Total - $12.19
