Lemon pepper baked orange roughy

Another delicious fish recipe.

What you’ll need:

1 lb orange roughy fillet
2 Tbl butter
2/3 c biscuit mix
¼ c yellow cornmeal
½ tsp lemon pepper seasoning salt
½ tsp salt
1 egg
2 Tbl water


Heat oven to 425 degrees. In a 13 x 9 x 2 inch pan, melt butter in oven. Stir biscuit mix, cornmeal, lemon pepper seasoning and salt together. In a separate dish, mix egg and water. Dip fish into egg mixture, then coat with biscuit mixture. Place in pan. Bake uncovered for 10 minutes. Turn fish with spatula and bake for an additional 15 minutes or until fish flakes easily with fork. Feeds 4.

fish fillets - $2.75
biscuit mix - $3.00
cornmeal - $3.12/5 pound bag
eggs - $1.09/ dozen
Total - $4.20
