Spicy cornmeal cod

I’ve mentioned before that I adore seafood. I like freshwater fish some too *lol* so I thought I’d share a couple of my fish recipes today.

What you’ll need:

1 ½ lbs cod, perch or other medium firm fish fillets, about ½ inch thick
¾ c cornmeal
¼ c flour
½ tsp salt
½ tsp garlic powder
½ tsp dried oregano leaves
½ tsp cayenne pepper
½ tsp pepper
2 eggs
3 Tbl butter, melted

Heat oven to 500 degrees. Cut fish into 4 x 2 inch pieces. Mix remaining ingredients except eggs and butter. Dip fish into eggs, then coat with cornmeal mixture. Place fish on ungreased cookie sheet. Drizzle butter over fish. Bake 10 - 12 minutes, turning fish once, until golden brown. Feeds 6.

fish fillets - $2.75/lb
cornmeal - $3.12/5 pound bag
flour - $2.12/5 pound bag
eggs - $1.09/ dozen
butter - $1.75/pound
Total - $5.24
