Twice baked potatoes

Great as an appetizer or as a side dish.

What you’ll need:

6 medium potatoes
6 strips bacon, cooked and crumbled
½ c (4 oz) cheddar cheese, grated
½ c sour cream
2 green onion, chopped
Vegetable or olive oil
Salt
Additional shredded cheese for topping

Bake potatoes until they are soft when you squeeze them. Slice each baked potato in half. Scoop out insides of potatoes, within about ¼ inch of edges.









Allow potatoes to cool slightly and then lightly coat the inside and outside of potato skins with oil. Place on a rack over a roasting pan. Return to oven and bake @ 450 degrees for about 5 minutes. Turn over and cook for an additional 5 minutes. Remove from oven. In a bowl, mix together potato pulp, bacon, cheese, sour cream and onion just until combined. Fill each potato skin with potato mixture. Sprinkle tops with additional shredded cheese. Return to oven and bake for another 5 - 8 minutes or until heated through and cheese is melted. Top with more sour cream if desired. Makes 12 potato halves.
